The standard Niman Ranch hot dog is approximately the same length as many other brands' "bun-length" varieties, and thicker too-not as thick as a jumbo dog, but enough to notice. While many brands use smoke extracts, Niman Ranch's dogs are smoked in wood pits the flavor proves it and so does the exterior, which has a wonderful snap that's the result of that slow smoking. If you're lucky, though, the hot dogs are still being smoked, which is a different kind of curing. What manufacturers usually use instead is celery powder, a natural product that is high in nitrates (nitrates convert to nitrites in the presence of bacteria in the meat, extending the meat's shelf life and helping the meat retain a pink color). We prefer bun-length dogs and tasted these whenever available. That snap is important, and it's usually where most hot dogs fall short, having either no snap (which makes the dog seem mushy) or an exterior so tough that it's hard to bite through cleanly without making a mess of the toppings. They're meaty with a nice smoky profile and a good snap when bitten through. Our famous pork and beef hot dog blended with a unique spice mix and stuffed in a natural pork casing. In the lead: kosher beef-namely that by Hebrew National. But of the 17 kinds of hot dog we sampled in our recent taste test (some beef, some pork, some a combination of these and other meats), the pork varieties easily slid into the bottom ranks-except for one. Maybe you already knew this, but I didn't, and-having grown up in a world that knew only pork hot dogs-it was a particularly hard fact for me to swallow.
